Avocado Brownies (great for kids!)

4 oz 70% chocolate (I like Lindt)

1 tbsp coconut or MCT oil

1/2 cup unsweetened cocoa

1/4 cup Truvia

1/2 cup hazelnut flour

2 tbsp vanilla protein powder

2 ripe avocados pitted and mashed until smooth

1/4 cup prune puree (look for this in baby section)

8 egg whites or 4 whole eggs

1 tsp baking powder

1 tsp baking soda

Pinch salt

Melt chocolate and oil together in a bowl. In a second bowl combine unsweetened cocoa, hazelnut flour, Truvia, protein powder, baking soda, baking powder and salt. In a third bowl, place the mashed avocado, and blend with the prune puree. In a fourth LARGE bowl (consider cleanup your WOD), beat the eggs, then fold in avocado mixture, then dry ingredients and finally the melted chocolate mixture. Cook at 350 until JUST set in the middle and allow to cool.
