Cheesecake

Preheat oven to 360


Crust:

1 cup almond meal

1/2 tbsp. cinnamon

4 packets Truvia

2-3 tablespoons almond butter or coconut oil

Blend all and press on bottom of springform pan. Bake 8-10 mins until golden, remove from oven.


Cheesecake:

16 oz reduced fat or whipped cream cheese

16 oz fat free cream cheese

1 cup 2% Fage

1 whole egg

3 egg whites, beaten

½ cup coconut sugar

½ cup Truvia (or - 1 whole cup



Truvia and no coconut sugar)

2 tbsps vanilla protein powder

1 tsp lemon zest

This is much easier to do if you allow cream cheese to get to room temp (2 hours) – then: blend cream cheeses, and coconut sugar/truvia. Add yogurt, blend. Beat egg whites into peak, beat the egg and fold into egg whites, then add eggs and fold into cream cheese mixture. Add vanilla protein powder and lemon. Pour onto crust.


Bake 1 hr and 10 mins. Then turn off oven and leave in oven another 20 mins.

Allow to cool 2 hours. Cover and refrigerate OVERNIGHT before eating.


Top with sugar free raspberry and/or whipped cream.
