6 hard boiled (8 minutes) peeled eggs - do not over boil, they will turn green!
2 tbsps cup avocado oil mayonnaise
1/3 cup cooked riced cauliflower
1 teaspoon apple cider vinegar
1 tbsp dijon mustard
1 small finely chopped pickle
1/8 teaspoon salt
Freshly ground black pepper
1/8 teaspoon turmeric
Smoked Spanish paprika, for garnish
Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Throw out three of the yolks. Mash the remaining yolks using a fork. Add mayonnaise, cauliflower, vinegar, mustard, pickle, salt, and pepper, turmeric and mix well.
Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with paprika and serve.
