Lower Calorie Deviled Eggs

Ingredients:


6 hard boiled (8 minutes) peeled eggs - do not over boil, they will turn green!

2 tbsps cup avocado oil mayonnaise

1/3 cup cooked riced cauliflower

1 teaspoon apple cider vinegar

1 tbsp dijon mustard

1 small finely chopped pickle

1/8 teaspoon salt

Freshly ground black pepper

1/8 teaspoon turmeric

Smoked Spanish paprika, for garnish



Directions:

  1. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Throw out three of the yolks. Mash the remaining yolks using a fork. Add mayonnaise, cauliflower, vinegar, mustard, pickle, salt, and pepper, turmeric and mix well.

  2. Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with paprika and serve.

Each two halves: 81 calories, 5 grams protein, 1 gram carbohydrate, 6.3 grams fat
