1/4 shallot diced
1/3 spanish onion (sweet) diced very small
1 tbsp olive oil
1 lb grassfed beef (or lamb or bison or turkey - just be sure it is grass-fed or organic) –
2 egg whites
1 tsp meat seasoning spices
1 tsp Cajun spice seasoning (important!)
2 jars no sugar added tomato sauce
1 tsp truffle oil (optional)
Sauté the shallots and onions in ½ tbsp. olive oil until well browned.
Add to remaining ingredients, mix all together well.
Put remaining ½ tbsp. olive oil in skillet – form mixture into small balls and brown on all sides. Once browned add the 2 jars tomato sauce and simmer on low until sauce reduced (1-1.5 hours). Add the truffle oil (optional) before serving.
Serve with black bean or chick pea pasta, zucchini linguine or spaghetti squash. Or nothing at all!
