"Nutella" Chocolate Hazelnut Protein Cookies

4 scoops chocolate protein powder (I like Vega Sport)

2 tbsp unsweetened cocoa powder

1/2 cup Truvia

1 cup hazelnut flour

1 cup almond butter

1 cup egg whites, lighten beaten (important!)

1 tsp baking soda

1 tsp organic vanilla extract

1 pinch salt

1/2 cup sugar free chocolate chips (such as Lilly's)


Combine protein powder, cocoa, trivia, almond butter and hazelnut flour. Consistency will be very dense/dry. Add egg whites (must be beaten --or use carton egg whites--, otherwise they will slide around and not blend well). The expectation is that the egg whites will make everything "wetter" but in fact it will make the mixture drier.

Add baking soda, vanilla, salt, and lastly fold in chocolate chips.

Shape into balls and flatten. Bake on a pam-sprayed parchment sheet (or cookie tray) at a pre heated 350 degrees for 9-12 mins (depending on size). Should be cooked through.

Refrigerate leftovers.
