Protein Pancakes/Crêpes


8 egg whites or 4 whole eggs egg whites

1 scoop (4 oz) vanilla protein powder

1/3 cup ground hazelnut or almond flour

Pinch salt

For crêpes, leave as is, for pancakes add a pinch each baking powder and baking soda

Unsweetened almond milk until crêpe or pancake batter consistency is achieved (pancakes are thicker)

Real maple syrup or sugar free syrup or any other toppings (Lemon Juice and Truvia honey are delicious on crêpes.



Directions:

Beat eggs/egg whites. Add protein powder, hazelnut flour and pinch of salt. Add baking soda/powder if making pancakes. Add almond milk until proper consistency is achieved.


Use this batter to make pancakes as you usually would – use Pam spray or a little butter to cook. I like to top these with almond or pistachio nut butter.
